In my father's case he can not have cinnamon because of his crohns. Cinnamon, pepper, and other hot spices causes him to go through more spasms and distention which in turn causes more trips to the bathroom. Thus in recipes that calls for cinnamon we put vanilla in as a cinnamon replacement. As we have found at church functions; my mother's cinnamon free pies and crisps disappear quicker than those containing cinnamon. Here's the recipe for apple crisp.

Ingredients:
6 medium to large sliced peeled apples
1 tsp. vanilla (replacing 1 tsp. cinnamon)
1 tbs. water
1 tsp. lemon juice (If you can not have citrus leave this one out.)
1 cup rolled oats (If oats don't work for you, replace with flour.)
3/4 cup firmly packed brown sugar
3/4 cup all purpose flour
1/2 cup margarine or butter (Fleischman's salt free or light works if on
dairy free diet.)hint: whey = dairy
1. Preheat oven to 375 degrees
2. Place apples across the bottom of casserole dish
3. Sprinkle vanilla and water over your apples. (Sprinkle lemon on too if using lemon.) The lemon is to keep apples from browning and brings out a sweater flavor.
4. Mix dry ingredients and margarine in bowl with a fork or hands until crumbly. Hint you do not want butter to melt.
5. Sprinkle crumbly mixture over apples.
Place in oven uncovered for 25 to 35 min. until crisp is golden.
This recipe serves 12 and a lot can be done with it. You can replace the apples with peaches or add peaches to the apples. Also, if your loved one is diabetic or has hypoglycemia one can replace the brown sugar with raw sugar or splenda depending on what their diet allows.
