Irritable Bowel Syndrom (IBS)

I was diagnosed to have IBS when I was 20 years old. I found that I had flare ups mostly as a result of stress and sometimes because of what I had eaten. For me flare ups included abdominal distention, abdominal pain, diarreah, and sometimes constipation. The diet I was placed on was similar to that of a Crohns patient. I had to avoid foods containing pepper or cinnamon because they would burn and cause distention and burning. Dairy bothered me and so did hard to digest foods such as corn and seeds. I had to increase the amount of fiber I had in my diet and I had to avoid over eating. If I over ate that really made me sick. There were other foods that bothered me too such as eggs and grease but this was because of gall bladder. I had my gall bladder out in college but had the most improvement after graduation. The stress I put myself through preparing for mid terms and final exams really affected my digestive track. My aunt says that hers is the same way. She has to watch her stress levels. If she has too much stress then things flare up. When things flare up certain foods can add to that flare up. Again I am not a Doctor but I am a person who herself was diagnosed with IBS. I will admitt that later I was told I never had IBS but had a nonfunctioning gall bladder with out stones. However, my aunt does have IBS. Please follow the diet and instructions of your health care provider and dietitian in regards to this condition. People are all different and this condition treats everybody differently.

Peach Toast

Recipe can change to suite number of people you are serving.
For one person use:
1 peach peeled and sliced
2 slices of bread
butter or margerine
brown sugar or sucanat

Butter one side of the two slices of bread. Place on hot pan butter side down. Place enough sliced peaches to cover the toast. Sprinkle bown sugar or sucanat over the peaches according to taste. Scoop toast onto plate when golden and when the sugar is melted. Serve and enjoy your peach toast. This can be used for breakfast, lunch, or dinner.
Hint: If you want more fiber use multigrain bread or rice bread instead of white bread.
